Rosemary is from the mint family. An evergreen herb native to the Mediterranean Rosemary has a distinctive fragrant aroma with a bittersweet flavor that tastes mildly of lemon and pine. Used to flavor chicken, lamb, pork, salmon, tuna, soups, and sauces. Crush the leaves before adding them to your dishes, to release the full aroma and flavor. It's slightly bitter and can become too bitter if overcooked. So add it late in the cooking process.
